Recovery Kitchen EP1: Bed Ridden Brownies
You Will Need:
3/4 CUP SUGAR
1/3 CUP OIL
2 EGGS
1 TEASPOON VANILLA
1/2 CUP ALL PURPOSE FLOUR
1/3 CUP CACAO POWDER
1/2 TEASPOON BAKING POWDER
PINCH OF SALT
1 TO 1 1/2 CUP FRESH RHUBARB, DICED
1/2 CUP CHOCOLATE CHIPS
Whisk together the sugar, oil, eggs, and vanilla. In a separate bowl combine the flour, cacao powder, baking powder, and salt. Add the wet ingredients to the dry. Stir until combined. Mix in the rhubarb and chocolate chips. Pour into a parchment lined 8x8 pan. Bake at 375 for 25 to 30 minutes or until a toothpick comes out clean. Let cool for a few minutes. Slice and serve with vanilla ice cream or whipped cream. Delicious!!
