Sunshine Biscotti

YOU WILL NEED:

1 CUP TOASTED ALMONDS*

1 EGG (PLUS ONE MORE FOR BRUSHING BEFORE BAKING)

1/3 CUP SUGAR

1/3 CUP OIL

1 ORANGE, ZEST

1 1/2 TBS HONEY

1 TSP VANILLA EXTRACT

1/2 TSP ALMOND EXTRACT

2 CUPS ALL PURPOSE FLOUR

3/4 TSP BAKING POWDER

PINCH OF SALT

*If you can’t find sliced almonds already toasted you can toast them yourself. I just tossed them in a pan on medium-medium/high heat and kept stirring until they became golden and fragrant. You don’t have to toast them but I think it does add a really nice flavor.

Preheat oven to 350F. Whisk egg and sugar together until combined. To that add the oil, orange zest, honey, vanilla extract, and almond extract. Once that is combined add the flour, baking powder, and salt and mix until it just comes together. Toss the almonds in and mix until they are distributed evenly. I use my hands for this because I tend to overmix if i’m using a spoon.

Split the dough in half and on a parchment lined baking tray shape each half into a flattened log roughly 6” x 4” x 3/4”. Beat an egg and brush each log with the egg wash. This will ensure a crisp, crunchy, golden biscotti!

Bake them at 350F for 25-30 minutes until the surface begins to fim up. Remove from the oven and let cool for 10-15 minutes. Don’ turn off the oven, we aren’t done baking! While the biscotti cools reduce the oven temp to 250F.

Transfer the cooled logs to a cutting board and slice into 1/2” pieces. Be gentle as it could crumble easily at this point. Place the slices back on the baking tray, cut side up and down. Do not brush again with egg wash, just put back in the oven and bake for another 10 minutes. Turn the biscotti over and bake again for another 10 minutes.

Remove from oven and let cool. Enjoy your snappy, crisp, goes-great-with-coffee cookie for days to come! (Though they never last that long around here!)

**You can really flavor these however you like! They would be great with a chocolate drizzle or dip. I have made them with dehydrated cherry and dark chocolate and they were delicious. Have some fun with the recipe and make them to suit your tastes!

***You can make the dough ahead of time and freeze it for another day. We have done this and just thawed it before baking.
