Instant Pot Applesauce Cake

YOU WILL NEED:

1/4 CUP BUTTER

1/3 CUP SUGAR

1/2 CUP APPLESAUCE

1/4 CUP OATS

1/4 CUP OAT FLOUR

1/2 CUP ALL PURPOSE FLOUR

1 TSP PUMPKIN PIE SPICE

1 TSP BAKING SODA

PINCH OF SALT

Cream together the butter and sugar. Add the applesauce to the mix and combine. To that add all the remaining ingredients then stir a final time until a batter comes together. Don’t overmix! Pour into a pan that fits your instant pot. I have the Instant Pot Mini and do not happen to have a dish that fits inside so I used tin foil to make a baking pan (see video) and sprayed it with non stick spray. Put your trivet inside your instant pot and add just enough water so it doesn’t come over your trivet, about 1 cup. Place your baking pan on top of the trivet. Close up the IP and cook at high pressure for 40 minutes with a 12 minute natural release. Once it’s done remove from the IP and let cool for a bit. It will look undercooked at first but as it cools you will see it is perfectly cooked and moist!
